Chicken Chilly Ginger Fry
Ingredients:
*Boneless Chicken Pieces -250 gm
*Red Chilli -6 slits
*Ginger - 1 piece
*Red chilly powder - 1/4 tbsp (for colour) *Garam masala powder - 1/4 tsp
*Pepper Powder -1 Tsp
*Salt to taste
Directions :
*Marinate cleaned chicken with ( paste of above ingredients) ,salt for at least 1hr.
*Heat 5 tsp of oil in a non- stick and fry.
Easy to cook, great to eat :)
* Cut Liver into
* Take a non-stick pan, add 2tsp oil ,splutter mustard seeds.
* Dry Fry the liver pieces.
* Add 4-6 pieces of sliced shallots and cook for another 5-10mins until onion is brown.Add green chilly slits & fry..
Serve in a plate and eat ...:)
Chicken Vattichathu (roasted)
Ingredients:
* Chicken (sliced into curry sized pieces) – 1 kg
* Garam Masala – 1 tbsp
* Coriander Powder – 2 tbsp* Turmeric Powder – 1/2 tsp
* Pepper Powder – 1/2 tsp
* Red chilly powder – 2 tbsp
* Ginger Paste -1 tsp
* Garlic Paste – 1 tsp
* Onion (sliced) – 1 large
* Shallots (small onion) -- (10-15)
* Curry Leaves – 2 springs
* Oil – 2 tbsp
* Mustard Seeds – 1/2 tsp
* Salt – As required
Directions :
* Clean the chicken pieces and drain out excess water.
* Roast 1 tbsp Garam masala powder, 2 tbsp coriander powder and 2 tbsp chilly powder , ½ tsp Turmeric on low flame.
* Marinate the chicken pieces with the above roasted masala powders, 1 tsp ginger paste, 1 tsp garlic paste, 1/2 tsp pepper and salt. Keep it aside for 45 minutes.
* Heat 2 tbsp oil in Pressure cooker and add mustard seeds.
* Add onions and curry leave and cook till the onions half baked.
* Add marinated chicken ,required water for chicken to cook.
* Leave it on low flame for up to 2 whistles.
Now to roast the chicken / to make Chicken Vattichathu, you can add the half pressure cooked chicken to a non stick pan. Cover and cook on low flame for another 20-30 minutes, till the water evaporates completely.
Chicken Cutlet
Ingredients:
* Onion – (3 -4 ) , minced
* Shallots – (10-15) , minced
* Green Chilly – (5-6) slits, minced
* Ginger – (8- 9) slits, minced
* Chili powder - ½ tsp
* Turmeric powder - ½ tsp
* Chicken minced - 500 gm
* Gram masala powder – ½ tsp
* Rusk – ( 4- 5 pieces ) bread crumbs
* Egg – 1 or 2 without yolk
* Oil to deep fry
* Salt to taste
Directions:
* Pressure cook boneless chicken 6-8 pieces with salt , turmeric & pepper powder. Then mince the chicken.
* Heat the oil in a kadai.
* Fry onion, ginger and minced green chilly till brown.
* Add chili and turmeric powder and Salt. Fry for 5 minutes.
* Once the mixture is cool. Shape the mixture into cutlets.
* Coat with egg and bread crumbs.
* Deep fry in hot oil till golden brown.
* Drain to a tissue paper and serve hot :)
